we have 3 different size mattresses in our house and our linen closet was always a mess. they say that necessity is the mother of invention and this is how i saved my sanity in the bed linens department: i keep each set of bed linens inside one of the pillow cases and never buy matching sheets for different size beds. this allows my girls to pick their own sheet sets and they don't have to pick through stacks to find what they want.

This is a great tip. I can never keep track of the queen size linens for the spare room and often confuse them with the king size linens for our bed.
